(makes about 12 tortillas)
Ingredients:
2 cups masa harina (corn flour for tortillas, NOT cornmeal)
1 ½ cups warm water (adjust as needed)
½ tsp salt
Instructions:
Mix Dough
In a bowl, combine masa harina and salt. Add warm water gradually and knead until a soft dough forms. It shouldn't be sticky or dry—think Play-Doh texture.
Rest
Cover dough with a damp towel and let it rest for 20–30 minutes to fully hydrate.
Divide and Shape
Divide dough into 12 balls. Keep them covered while working. Use a tortilla press (or roll between two sheets of parchment with a rolling pin) to flatten each ball into a thin round (about 5 - 6 inches wide).
Cook
Heat a cast-iron skillet or non-stick pan over medium-high heat. Cook each tortilla for about:
30 seconds on first side
1 minute on second side
30 more seconds on first side again (should puff slightly)
Stack cooked tortillas in a clean kitchen towel to keep warm and soft.
